Weekly Meals - Kingwood Moms

Whew, meals are taken care of for the week!
I usually try and keep my meals simple and delicious. Something always comes up during the week so I need meals on the table quickly. And enough for leftovers for my husband and I to take for lunches the next day.
The recipes that I have suggested will feed our family of four. Two Adults and Two kiddos 2 & 4.
I hope you guys enjoy! Rember this is just inspiration, do what your family likes.

Sunday: Spaghetti and Meatballs
This is one of the meals I allow…yes allow my husband to cook in the kitchen.
He makes such a mess but he loves to cook this recipe. It is DELISH! You can leave it as is, we change a few things to make it paleo for our family.
Instead of spaghetti, we cook a Spaghetti Squash in the Instant Pot.r
-Super easy- Cut in half and season, add a little oil( whatever you have) and put in Instant Pot for 14 minutes. Done!

Monday: Chicken Nuggets- There are many different options to choose from these days. I think what makes a difference is doing a wet marinade before coating with flour. It gives it great flavor and keeps it very moist.
Blistered Green Beans- Get oil hot in a skillet, Throw in the fresh, whole green beans. Let the green beans cook a few minutes before stirring them. Season with Salt & Pepper, Garlic Powder, and Onion Powder. Add about a half a cup of water, or to add a richer flavor, add chicken broth to the pan. Cover with a lid for about 15-20 minutes. Depending on how you like your green beans. If you like them a little crunchy stay closer to the 15-minute mark. My husband likes his green beans dead, like really soft so I cook them probably closer to 20 minutes. Turn off the flame and add a dollop (not a Paula Deen dollop) just enough to coat all the green beans. For a little extra crunch, I like to add slivered almonds to the top when I serve.

Tuesday:
Sloppy Joes and Sweet Potato Tots
This Sloppy Joe recipe is a family recipe. My mom has been making since I was little. ( And trust me, I did not get my cooking ability from my mom, Love you, Mom!) I promise it is easy. No, it is not from a can.
Hamburger Meat- 1 pound or you can double this recipe
Ketchup- about 1/2 cup
Yellow Mustard 1-2 tablespoons
Syrup 1/4-1/2 cup
Worcheshire Sauce- a few shakes
Salt and Pepper
Onion Powder
Garlic Powder
There really is no recipe. Don’t make it hard on yourself. When you combine the ingredients into the pan, you want to make kind of like a sauce to coat all of the hamburger meat. Just pour a little of each and if it isn’t how you want it, add more. Taste and see what you think.

We like to serve it over Sweet Potatoe Tater Tots.
Another Idea would be to make Taco Meat with the Hamburger Meat and make “Totchos”, since it is TACO TUESDAY. That is also another favorite in our house.
Just add taco toppings to the meat and you have a completely new meal! Try it, I promise your family will love it.

Thursday: The Defined Dish (again one of my favorite people to get recipes from) Hibachi Chicken with Magic Mustard Sauce

Friday: Dinner Out!

Saturday: Costco’s Pulled Pork and Crispy Potatoes 
This is one of our favorite meals. It is clean eating, fast to prepare and an even easier cleanup.
A Tip- If the pulled pork is frozen take it out of the package and cook it in a skillet, or even faster in the Instant Pot for a few minutes.
You don’t have to use duck fat for the potatoes, I just use Olive Oil or Avocado. Make it easy on your self, use what you have.
Add Cheese and Sour Cream to make it even better.
