Weekly Meals: 10/8 - Kingwood Moms

I am by no means a food blogger, or anything close.
I just love food. Meal planning helps my family and I stay on a budget, and make sure we don’t waste a ton of food throughout the week. I hope this helps you figure out what is for dinner this week.

Monday: Shepards Pie
This is one of my favorite meals, and I feel like it gets a bad rap because of the name. I also love to cook this at the end of the week when I have some leftovers I can sneak into this meal to get rid of too. It makes a lot which is great for a bigger family, leftovers or for lunches throughout the week as well. If you have a bigger family add 2 pounds of meat.

Tuesday: Chicken Lettuce Wraps
We are not huge fans of the ground chicken, so I am going to try The Defined Dish, Bang Bang Chicken, using my favorite chicken thighs instead of making true traditional Lettuce Wraps. I will add some stir fry veggies too.

Wednesday: I need something simple tonight. I’ll be doing breakfast for dinner. Possible a quick hash or something. The Healthy Little Peach has a delicious one if you’re looking for something different.

Thursday: Instant Pot Soup. It is supposed to get “cold” here, so I am hoping that is the truth and making a Fall favorite, in the Instant Pot.
Literally, chop vegetables then dump all the vegetables in the pot and you’re done! The recipe posted is for a dutch oven but you can easily put it in the Instant Pot for 20 minutes or however long you have. To make the soup a little heartier you can always add sausage or chicken too. My husband loves Chicken, Apple Sausage in our soups. I might even make some Against All Grain, No Grain “Corn” Bread from her celebrations book. It is amazing!

Friday: Chicken Wings from The Defined DishI can’t decide which one I am cooking right now, so I just gave you a few to choose from. They are ALL so good. Trust me.I’ll probably see what leftovers I have and add them for sides. Maybe some roasted potatoes and green beans.

Saturday: Eating Out! No cooking for this momma!
